Gözleme
So good. Just make them, and serve with tzaziki or something.
Gözleme dough (makes 4)
- 2 cups flour
- 1/2 cup water
- 1/2 tsp salt
- 2 tbsp olive oil
- 2 tbsp yogurt
- 1/2 packet yeast (optional)
Just mix and let it rest for a couple of minutes. It doesn't actually need to rise. Divide into 4 pieces.
Filling with spinach, onion, and feta
- 500g spinach
- 1 onion (preferably red)
- Garlic
- Olive oil
- Salt, pepper, red chili flakes, sesame to taste
- Vegan feta
Fry the onions in olive oil until clear, then add the garlic and let brown slightly, then put spinach in to wilt down and season. Crumble in the feta as you're forming the pastries.
Roll the pieces of dough out until you have a circle with a diameter of ~10cm. Put the filling on one half and crumble the feta in as you go. Then fold the pieces into a half moon shape and seal the perimeter. Slice one corner and press the air out. Brush the gözleme with a bit of olive oil, and cook them in a frying pan. It takes about 5min per piece.
